A First-of-Its-Kind Rooftop Bar and Restaurant Showcasing the Bold Flavors of Durango, Mexico, Debuts in the Inland Empire

RANCHO CUCAMONGA, CA (May 7, 2025) – Rancho Cucamonga’s first rooftop dining destination is now officially open with the debut of Durango Cocina and Rooftop, the final piece of the full-service restaurant and bar concept Durango Cocina, located inside the newly launched Sanctity Hotel. This opening marks a major milestone for Rancho’s hospitality scene—offering the city’s first rooftop experience alongside an already-acclaimed modern Mexican restaurant.

Helmed by Michelin Bib Gourmand-awarded Chef Alex Carrasco, Durango Cocina presents an elevated take on Durango, Mexico’s culinary heritage. The menu combines fire pit cooking, heirloom ingredients, and bold flavor profiles with thoughtful presentation and seasonal sourcing.

Standout Rooftop Menu Dishes Include:

  • Tuna Tartare: Sashimi-grade tuna tossed with morita aioli, avocado, and ponzu. Served with tortilla chips.
  • Beef Skewers: Tender flap steak marinated in oregano and ancho chile, finished with cotija crema. Served with cabbage salad and potato.
  • Ceviche Clasico de Camaron: Shrimp marinated with cucumber, onion, tomato, avocado, and house-made salsa marisquera. Served with crispy tostadas.

Standout Rooftop Menu Drinks Include:

  • Mango Caliente: A Sweet-Heat Sensation Ol’ Smokey Mango Habanero Whiskey, orange juice, triple sec, and lime juice – smoky, spicy, and bursting with tropical flair.
  • Lychee Me Marg’: A Tropical Twist on Tradition Tequila Blanco, lychee juice, triple sec, and lime juice – floral, tart, and dangerously smooth.
  • Coconut Cream Dream: Piña Colada Meets Margarita Tequila Blanco, Ancho Reyes Verde, coconut syrup, triple sec, lime juice & agave – creamy, spicy, and indulgently tropical.


Durango Rooftop features panoramic views of Mount San Antonio, serpentine banquettes framed by a flagstone wall, cozy fire pits, and private cabanas—offering a relaxed, open-air environment to gather and unwind. The space is designed to complement the refined yet warm interiors of the downstairs dining room, which features sculptural chandeliers, terracotta tiles, hand-cut wood paneling, and custom high-back seating.

"At Durango Cocina, we celebrate tradition, culture, and the power of food to bring people together,” Carrasco said. “Every dish is rooted in authenticity—from cooking over open flames to using heirloom spices and techniques passed down through generations. We’re excited to bring something truly special to Rancho Cucamonga.”

The full vision for Durango Cocina and Rooftop was inspired by a trip to Durango, Mexico, where Carrasco and the Boulevard Hospitality Group team immersed themselves in local markets, family kitchens, and open-flame cooking sites. That connection to place and tradition runs through every element of the menu and space.

Signature Durango Cocina Items Include:

  • Slow-Roasted Bone-In Short Ribs: Morita glaze, coleslaw, serrano salsa, and ajonjolí dressing.
  • Leche De Tigre Ceviche: Catch of the day cured in our zesty, spicy citrus-based "tiger’s milk" marinade, topped with crispy fried calamari.
  • Albóndigas Duranguenses: Durango-style meatballs served in a flavorful seven-chile caldillo sauce, accompanied by molletes bread.
  • Aguachiles: Fresh Mexican shrimp marinated in serrano salsa with cucumber, onion, and avocado.

Signature Durango Cocina Cocktails Include:

  • Cherry Blossom: A delicate mix of tequila, house-made cherry blossom syrup, passionfruit liqueur, and pineapple juice. The sweet floral notes with tropical fruit make this a perfect sip for spring or summer.
  • Margarita Tamarindo: A twist on the classic margarita, featuring tequila and tamarind paired with orange liqueur. Sweet, tart, and savory, this cocktail is an irresistible fusion of flavors.

Walk-ins only for rooftop dining for now.
